Who knew there were so many October babies? Today we celebrate, Kim Don Sing, or who I refer to as Mum! Helen Don Sing who happens to be her real daughter and my best friend so kindly shares her with me and I couldn’t have asked for a more loving and supportive family. Kim is the kind of mother all children dream of…she’s smart, kind, soft spoken, supportive, funny, hello BEAUTIFUL and most importantly knows her way around the kitchen! 😉
The Don Sings are the best hosts, it’s like going to a resort when visiting them in Washington, but with better food and service. Breakfast is always freshly baked goodies and you can order a custom coffee drink with Gabe the barista! 🙂 Dinners are always a delight with the freshest ingredients, cooked with love and perfectly paired wines sometimes several bottles of perfectly paired wines. LOL! It’s like going to a Michelin star restaurant everyday. One of my all time favorite things that is served is Kim’s delicious candied bacon. It is to die for and the aroma wakes you up… or at least wakes me up. In honor of her, I have tried to recreate this bacon recipe thanks to the recipe book Helen made for me.
Okay, enough about food… this special woman should be celebrated every day for the incredible person she is and the amazing mother that we know and love. Happiest Birthday Mum!!!! I miss and love you very much!
